We’ve released our newest wine – our 2025 Mataro Rosé. From the Watilla vineyard on Colville Road, just outside of the Willunga township heading towards the ocean.
The story behind this rose is an interesting one. Last year at a mutual friend’s wedding, a plan was hatched by Cassie and our grape grower Ben Lacey’s partner Heidi. Both of them are rose aficionados, and they were bemoaning the fact that we didn’t make a rose. The girls decided that night that was going to change. So discussions started and a plan was hatched for us to make some rose from one of their vineyards in 2025. Fast forward to harvest and Ben had a small block of Mataro that was suitable for this project, and was designated the rose grapes for our wine. As this was a joint venture between the Laceys and us, once the grapes were ready for harvesting, we got both families together for an afternoon of grape picking and we all picked 1100kg of grapes for rose. It was fun to have all the kids involved, and I think they may have even enjoyed it!
Once the grapes were off the vines then it was up to us to turn it into a delicious drink, which I think that we have. Rose is one of those things that can be many things to many people. At its base it just need to be refreshing and tasty, but it can also be complex and serious as well. This rose is fermented dry, with no residual sugar remaining. It has some texture and flavour, but still retains freshness and ultimately is high on the drinkability scale. Mataro is a great variety to use for rose as it has a unique aroma and flavour profile and makes rose that are both interesting and easy to drink.
We’ve only got about 600 bottles and we’re only offering this wine to our wine club members, email subscribers and cellar door visitors. Don’t sleep on this one as it won’t last too long.
